White-seed melon (Cucumeropsis manni) commonly known as Egusi in Nigeria is native to West Africa. Egusi seeds are comprised of 44% oil, 30% protein, 10% carbohydrate, 4% ash and 3% fibre. The seeds are rich in essential vitamins. It is used as a thickener and in making the popular Egusi soup.
